I was craving something sweet some days back. With being home bound in this lockdown  I couldn’t have gone out to buy stuff, so I looked up in my pantry to find some bajra atta and jaggery.  Every year in winters I make sweet bajra  mathris  and it just reminded me of that. It was around 4 pm  that I began and we all had these sweet snacks with our tea at 5 pm.  How to make these sweet bajra mathri’s ?  Its not tough at all, the is recipe is very simple. Not only does it have minimal ingredients, it doesn’t take too long to prepare it. What more, it can last you a week when stored in a air tight jar.

Who can Eat sweet Bajra Mathris?

 Sweet Bajra mathris are a  healthy snack. Anyone and everyone, irrespective of age, gender, clinical conditions.  This is a traditional recipe and completely balanced.

Bajra

Bajra is high in fiber, it’s a gluten free millet and rich source of Magnesium and Potassium, along with other key micro nutrients. Magnesium plays an important role in insulin sensitivity. Potassium plays an inherent role in reducing Blood Pressure and is heart healthy. Bajra helps reduce bad cholesterol. With this profile, bajra is a good choice for diabetics and those with heart health issues.

Jaggery

Jaggery is an excellent source of antioxidants and unlike commercial sugar gives us more than just taste. It helps in cleansing the body, especially aids liver detox. Its excellent for our respiratory functioning and relieves constipation. Complains of constipation and bloating have only risen since the beginning of the lock down. With the lock down now extended to 3rd May, having jaggery will not only attend to this concern but also help boost immunity, something that everyone wants to improve during this pandemic.

Til

Til, richest source of Calcium. It comes handy to maintain Calcium levels in times when frequent shopping of vegetables, milk and milk products is not possible. Til is anti-inflammatory, for all those complaining of arthritis, joint pains and menstrual cramps, til will ensure ease. With high fiber, it helps reduce triglycerides and induce satiety.

Ghee :-

I have always sung glory of ghee. People who follow me know very well that the ghee is the best kind of fat ever. Its special Short Chain Fatty Acid profile makes it great not just for our gut bacteria but also boosts brain health. With its high smoking point, its my first choice to deep fry anything.

 

So having dissected each ingredient and ascertained its health benefits, I would still say that the complete health profile of this dish is greater than the sum of its parts. The glycemic index of this recipe is low and because its made from scratch at home, its fresh and has no chemicals or preservatives in it.

I strongly believe that it’s a perfect satiety and immunity boosting, calming and nourishing indulgence during this lockdown.

So what all ingredients would you need?

Following is the list of ingredients in the quantities required.

Bajra- 300 gms

Jaggery-100 gms

Water 200 gms wter

Til seeds – 60 gms

Elaichi- 2- 3  and cinnamon

Ghee  to fry

If you don’t have Barja, you could use Jowar or Ragi too. Turns out the same way

Steps:

In a pan, put 200 ml of water to boil, on medium flame.

Add Jaggerry to it and allow the jaggery to dissolve in it by stirring regularly.

Once dissolved completely, allow to cool

To the bajra add a pinch of salt and 60 gms of til seeds

Using the jaggery solution, knead a soft down.

Cover it and allow to rest for 10-15 mins.

Now take small portions of this dough, roll them between your palms and flatten them slightly to give a mathri shape.

Heat ghee in a pan. Once hot, fry the mathris in the ghee.

Your sweet bajra mathris are ready.
