Pumpkin Soup- Classic & Easy

Pumpkin soup is the best go to snack in winters. The bright orange color, the sweet taste, the immunity boosting properties and the warmth you so need in winters, it's all that and more in a cup!

Equipment

  • Peeler
  • Knife
  • A Heavy bottom Pan
  • Oven/ Gas Stove
  • Blender

Materials

  • 500 grams Orange Pumpkin
  • 1 Tablespoon Ghee/ Coconut Oil
  • 1/2 Teaspoon Cinnamon Powder
  • 1/2 Teaspoon Cayenne Pepper ( optional)
  • 1/2 Teaspoon Freshly ground Black Pepper
  • 2 tsp Teaspoon Salt
  • 2 Tablespoon Pumpkin Seeds
  • 150 ml Milk or Coconut Milk
  • 2 Tablespoon Finely chopped Cilantro
  • Fresh Cream to Garnish

Instructions

  • Wash the Pumpkin well and peel it to remove the skin. Also remove the seeds and fibrous buts from the core part of Pumkin
  • Dice the Pumpkin into small cubes
  • Place a heavy bottom pan on gas stove, add 1 Tbspn Ghee ( Clarified Butter) and when its hot, add the cubed pumpkin pieces in it. You may use Coconut oil to modify it to a vegan version.
  • Add 1/2 tsp of cinnamon powder to it and roast it well. If kids are not eating you may also add cayenne pepper. In my recipes I generally avoid because my daughter would not have it !
  • If you are using an oven, then in an oven tray, place the pumpkin cubes, drizzle ghee/ olive oil and mix cinnamon and roast it in an over for 10 mins, till brown and tender
  • Once it begins to turn brown, add salt to taste and cook it covered for 5-7 mins till it softens. I personally love the slight charred flavour that the browning of pumpkin brings. If you don't you may add salt before this stage and cook it till soft
  • Replace the lid with a wire mesh and allow the pumpkin to cool
  • Once cooled, blend the content in a blender
  • In the same heavy bottomed pan ( that we used earlier) transfer the pumpkin puree from the blender
  • Add 250 ml ( 1Cup) milk to this and check consistency. To make a Vegan Version, you may replace milk with coconut milk.
  • To correct the consistency add water, stir and check. Bring it to boil
  • Check for salt, add black pepper and freshly chopped cilantro.
  • You may also garnish each cup with a swirl of fresh cream and pumpkin seeds

Notes

Pumpkin   is highly nutritious. Not only is it high in Beta Carotenes, but also in antioxidants the prevent you from many chronic diseases. Its great to boost your immunity and keep you looking young. Enjoy this simple classic recipe to warm and strengthen yourself up from within this winters
